Winemaking
The grapes for our Blanc de Blancs were whole bunch pressed, wild fermented followed by full malo and tiraging in October 2017. All our sparkling wines are made using the traditional method, with the Blanc de Blanc seeing a minimum of five years tirage before being disgorged and released. A low dosage of 3g/l allows the elegant flavours of the fruit to shine through. This wine will develop beautifully under cork, with 2-3 years showing its brightest potential.
Tasting Notes
Racy and complex; this wine opens with crisp citrus notes and develops through the palate with stone fruits and Delamere’s classic oyster shell and minerality. A complex and lingering finish with delicate lemon blossom florals on the nose.
Food matches
Fresh Tasmanian oysters are always perfect accompaniment for the Delamere Blanc de Blancs. Calamari, white fish, cooked with butter and herbs would balance beautifully against the fresh minerality of this wine.

2016 Delamere Vineyards Blanc de Blancs, Tasmania
Pale straw with a fine, persistent bread and notes of baked apple, white peach, apple turnover, soft spice and stone. Biscuity tones wash in on a palate that shows a crystalline-acid focus, invigorating cadence and autolytic complexity. Fading out slowly with pure apple fruit, pastry notes and a wonderful singular acid line. DB 12.5% alc. ****
